Serving Lentils on New Year’s Day

Serving lentils on New Year’s Day is a tradition: an ancient Roman custom for good luck in the coming year.
You can prepare them in advance:
cook digestible and light lentils.
so you can move them from the freezer to the fridge on the evening of the 30th and get ahead for the New Year’s Eve dinner on the 31st.
Remember that dried lentils need soaking [12-24 hours].

    Alternatively, use packaged pre-cooked lentils.

  • Given the variety of dishes that characterize the New Year’s Eve table, it is preferable to limit to a taste, so a mini portion or finger food.
    Unless lentils and cotechino [wrapper: casing] or lentils and zampone [wrapper: front pig’s foot] are a real course on your holiday menu.

  • You can serve lentils hot, warm, or cold.

  • When to serve lentils on New Year’s Day?
    Before or after midnight?

    There are different schools of thought.
    I suggest:
    before midnight if the lentils with cotechino or zampone are a real course in the holiday menu;
    after midnight if the lentils are a taste for good luck for the coming year; in this case, a mini portion or finger is sufficient.

  • Place the lentils in the center of the table for the guests, for example, in a small pot or a small pan.
