Anelletti or anellini are a typical pasta shape from Palermo, today I used them to prepare a pasta salad or cold pasta dish: Sicilian Anelletti Salad with Cherry Tomatoes and Primosale Cheese.
The cold pasta with cherry tomatoes and primosale is light, summery, and delicious.
Quick: the only thing to cook is the pasta, the rest is added raw!
Cheese, which one to use?
Cheeses should be consumed no more than twice a week, in small doses, preferring fresh cheeses like low-fat ricotta.
• cottage cheese, ricotta, cacio ricotta;
• mozzarella, provola, scamorza in cubes or small dice;
• grana padano or parmigiano reggiano in flakes.
I used a primosale cheese.
The Sicilian Anelletti Salad with Cherry Tomatoes and Primosale Cheese is a one-dish meal as it concentrates the characteristics that distinguish a balanced meal in a single course.

Ingredients
- 160 g Sicilian anelletti
- 1 pinch mixed peppercorns (with grinder)
- 1 drizzle extra virgin olive oil (raw)
- to taste lemon juice
- 12 cherry tomatoes
- to taste celery
- primosale cheese (amount according to dietary plan)
- to taste basil
- to taste arugula
Tools
- 1 Bowl or Salad Bowl
Preparation
Cook the pasta, rinse it thoroughly under running water to cool it down, and let it drain well.
How long should the anelletti cook?
Some packages indicate a single cooking time [boiling] others double cooking [boiling + oven].
For my anelletti salad, I purchased a package with a single cooking time [boiling] and cooked them al dente, otherwise, testing is needed.Pour the pasta into a large salad bowl.
Grind pepper over the pasta.
Drizzle with a bit of raw olive oil and lemon juice in roughly the same amount and mix.Cherry Tomatoes
Wash the tomatoes thoroughly.
Cut and remove the stem part if deemed necessary.
Cut each tomato vertically into halves or quarters.Celery
Wash the celery thoroughly.
Cut the celery stalks into chunks and separate the leaves.Primosale Cheese
Cut the cheese into thin slices.Add to the pasta:
• cherry tomatoes;
• celery;
• cheese;
and mix.Plate it.
Grind a bit more pepper and add basil leaves.Your Sicilian Anelletti Salad with Cherry Tomatoes and Primosale Cheese is ready.
Try it also with arugula
Select and wash the arugula leaves.
Let them drain in a colander.
Dry them on a paper kitchen towel.Distribute the arugula.
Ideally, it should be added just before consuming the pasta salad; naturally, if prepared in advance and consumed picnic-style, it will still be fine, just less crisp.
