Spiced Baked Chicken

The spiced baked chicken crispy and golden outside and tender and juicy inside is a tasty version of the more common baked chicken.

I bought yellow chicken legs and thighs and asked the butcher to separate them [so as to have divided thighs and drumsticks] and to remove the skin [the chicken skin is very fatty, so it is advisable to remove it before cooking].

I marinated them with lemon juice [alternatively, white wine] and seasoned with a mix of herbs and spices.

Ingredients

  • 2 chicken thighs (thigh + drumstick)
  • to taste lemon juice (or white wine)
  • to taste mix of herbs and spices for roast
  • turmeric powder
  • red chili pepper (finely chopped)
  • mixed peppercorns (with grinder)

Tools

  • 1 Baking dish
  • 1 Plastic wrap sheet
  • 1 Baking tray 10×11.5 inches
  • 1 Parchment paper sheet

Preparation

  • Buy yellow chicken legs and thighs and ask the butcher to separate them [so as to have divided thighs and drumsticks] and to remove the skin [the chicken skin is very fatty, so it is advisable to remove it before cooking].

    Place the chicken in a baking dish for marinating.
    Drizzle the chicken pieces with lemon juice [or alternatively with white wine].

    Season the chicken with:
    • a mix of herbs and spices for roast;
    and the spices you prefer:
    • turmeric;
    • red chili pepper;
    • mixed pepper;
    • … ;
    and massage to evenly distribute the seasoning.

  • Seal the baking dish with plastic wrap or close it in a freezer bag and refrigerate for at least one hour.

    Remove the chicken from the fridge and proceed with cooking.

  • Line a baking tray with parchment paper and place the chicken pieces on top.
    Drizzle with the marinade.

    Spiced Baked Chicken
  • Briefly heat the oven.

    Medium-small sized thighs and drumsticks
    Bake at 356°F for 40 minutes and continue at 320°F for 20 minutes, in a fan oven.

    Larger sized thighs and drumsticks
    Bake at 392°F for 40 minutes and continue at 356°F for 20 minutes, in a fan oven.

    Plate up.

    Your spiced baked chicken is ready.

  • Follow the instructions [temperature and time] indicated in your appliance’s user manual.

    Procedure with my air fryer Ariete – Friggi Sano [Eurospin]:
    • set the temperature to 392°F;
    • preheat for 5 minutes;
    • remove the basket;
    • place the chicken pieces on the grill accessory without overlapping them;
    • cook for 25 minutes;
    • remove the basket;
    check that the chicken is cooked internally by testing a piece by spreading the meat with cutlery without breaking it;
    • turn the chicken pieces;
    • continue cooking for 5 minutes until crispy and golden.
