Tasty and Cheesy Baked Anelletti Light

Tasty and cheesy baked anelletti light are my simple version of the traditional Palermo-style anelletti or Sicilian-style anelletti.

Anelletti or anellini are a type of pasta typical of Palermo and are used to prepare a timbale.
Browsing through the supermarket shelves, I was amazed to find them in whole-wheat: Sicilian rings no. 33, but it was a rare find.

The traditional Sicilian cuisine recipe is rich in ingredients: meat ragù, cheeses [from caciocavallo to primo sale to provola] and cured meats, peas, hard-boiled eggs, and fried eggplant.

I prepared my light Sicilian anelletti with simple tomato sauce and mozzarella.

Ingredients

  • 160 g Sicilian anelletti
  • tomato sauce (homemade)
  • mozzarella (or light mozzarella)
  • to taste basil
  • to taste grated cheese (caciocavallo or grana or parmesan)
  • 1 pinch mixed peppercorns (with grinder)

mozzarella or light mozzarella + grated cheese → quantity according to dietary plan.

Preparation

  • Prepare plenty of tomato sauce.

  • Remove the mozzarella or light mozzarella from their liquid:
    • drain;
    • cut into cubes;
    • let them drain in a colander.

  • How long should the anelletti cook?
    Some packages indicate a single cooking time [boiling], others a double cooking time [boiling + oven].
    • single cooking time [boiling] cook very al dente [half the time indicated on the package].
    • double cooking time [boiling + oven] cook according to the two times indicated.

    Cook the pasta very al dente [it will be baked in the oven], rinse it under running water and drain.

    In a bowl, pour plenty of tomato sauce, the mozzarella cubes, and basil leaves.
    Add the pasta and mix well.

  • Prepare an oven dish.
    Pour the Sicilian anelletti with tomato and mozzarella into the dish.
    Finish with a sprinkle of grated cheese and grind the pepper.

    Briefly preheat the oven.
    Bake at 350°F in a fan oven for 15-20 minutes until a crispy crust forms on the surface.

    Plate.

    Your light baked anelletti are ready.

Alternatively with tomato and mozzarella, you can fill your Sicilian anelletti with:

or use more protein sources if your dietary plan allows.
