Tender squid and flavorful pan-seared squid is a delicate seafood dish that requires quick cooking.
As an alternative to squid, you can purchase cuttlefish.
In our dietary scheme, squid and cuttlefish are among the foods indicated with two asterisks, meaning ** to be consumed occasionally.
Indeed, although they are lean mollusks, they are a source of cholesterol whose intake should be limited.

Ingredients
- squid (grammage according to dietary scheme)
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- to taste lemon juice
- 1 drizzle extra virgin olive oil (raw)
- to taste salted capers
- to taste chopped parsley

Preparation
Buy squid from your trusted fishmonger, asking for them to be cleaned.
Otherwise, proceed with cleaning the squid:
• pull the head with the tentacles, extracting them from the sac along with the ink sac if the squid contains it;
• remove the cartilage from the mantle;
• remove the innards from the sac;
• continue cleaning the sac by pulling the skin;
• rinse the sac well under water [outside and inside];
• continue cleaning the tentacles by removing the eyes and extracting the beak;
• rinse the tentacles well under water.With this procedure, you’ll have closed sacs to cook whole, to stuff or cut into rings.
Cut the sacs open to make a flat sheet, separate the tentacles and fins.
Let them drain in a colander and blot the residual water with paper towels.
With a knife, score both sides of each squid diagonally.
Remove the squid from the fridge at least half an hour before cooking.
Heat a large non-stick pan.
Place the squid [body and tentacles, fins] in the pan.
Let them cook for a few minutes.Using kitchen tongs, lift them so that detaching from the pan they can curl up on themselves.
Turn them several times to ensure even cooking.
Plate.
Season with a pinch of salt and a pinch of pepper, lemon juice and a drizzle of raw olive oil, capers, and parsley.Your tender pan-seared squid is ready.
