Water Egg or Light Egg in a Pan | As Good as Fried but Super Light

If you crave fried eggs, but without oil or butter, try preparing the water egg: light egg in a pan as good as fried but super light!

It’s NOT a poached egg.
No need for a tall pot full of water and no need for experience and technique.

It’s NOT a fried egg.
It isn’t fried in butter or oil.

The water egg is an egg cooked in water, little enough that a non-stick pan suffices, as good as a fried egg but cooked in a light and fat-free way instead of fried.
Great for kids, too.

In Sicilian they say: “m’arricriai” … basically a delight!

Ingredients

  • 1 egg (2 if small)
  • 3.4 oz water
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste chopped parsley
  • 1 drizzle extra virgin olive oil (raw)

Preparation

It’s useful to know that washing eggs strips them of their protective coating, making the porous shell more susceptible to bacteria.
If the shell is dirty, clean it dry before storing and wash only before use.

  • For cooking one or two eggs, you need a mini non-stick pan.
    For cooking more eggs, use a larger non-stick pan and a larger amount of water.

    The water should not cover the egg but replace butter or oil, facilitate even cooking, and prevent sticking.

  • Pour about 3.4 oz of water into a non-stick pan and bring it to a boil.

    Break the egg and gently pour it into the pan, letting the white slide first and then the yolk in the center of the white.

    Cover with a lid* preferably glass, and cook on low heat for 5-10 minutes until the white is set and according to the desired yolk consistency.
    * as soon as the water starts to cover the egg and bubbling threatens to overflow, remove the lid.

    Using a spatula, gently lift the egg and transfer it to the plate.

  • Season with a pinch of salt and grind the pepper.
    Add parsley and drizzle with extra virgin olive oil.

    Your water egg is ready.

Storage, Tips, and Variations

It’s excellent with asparagus and/or on slices of toasted bread* like avocado toast with water egg.
* toasting bread slightly lowers its glycemic index, but the toasted bread should then be left to cool to avoid spikes – starch retrogradation process.

The water egg should be consumed immediately after preparation.
