You don’t need a tall pot full of water, and you don’t need experience and technique.

Water eggs are eggs cooked in a small amount of water, so you just need a non-stick pan. They are as good as pan-fried eggs but cooked in a light and fat-free way instead of frying.

- 0.42 cup water
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)

Preparation
It’s helpful to know that washing eggs removes their protective film, making the shell, which is porous, more susceptible to bacteria.
If the shell is dirty, clean it dry before storing and wash it only before use.
For cooking one or two eggs, you need a mini non-stick pan.
For cooking more eggs, use a larger non-stick pan and a greater amount of water.The water should not cover the egg but replace butter or oil, facilitate even cooking, and prevent sticking to the bottom.
Pour about 0.42 cup of water into a non-stick pan and bring it to a boil.
Break the egg and gently slide it into the pan, letting the white slide in first and then the yolk in the center of the white.
Cover with a preferably glass lid and cook over low heat for 5-10 minutes until the white is set and depending on the desired yolk consistency.
* as soon as the water starts to cover the egg and simmering risks overflowing, remove the lid.Using a spatula, carefully lift the egg and transfer it to a plate.
Season with a pinch of salt and grind the pepper.
Add the parsley and drizzle with a little extra virgin olive oil.Your water egg is ready.

It is excellent with asparagus and/or on slices of toasted bread* for example avocado toast with water egg.
* toasting the bread slightly lowers its glycemic index but toasted bread should then be allowed to cool to avoid spikes – starch retrogradation process.
