I thought of the whole wheat cocoa and coffee ring cake without butter, milk, and eggs for Father’s Day.
Who as a child, with the complicity of their mother, hasn’t given their dad those traditional coffee-filled chocolates packaged in a tie-shaped box at least once?
About quantities and mold:
• the ring mold requires a larger amount of batter than usual so that the result is not too low;
• my simple silicone ring mold is 1.77 inches high and 12 inches wide;
• if you use a cake mold, loaf pan, muffin molds, or small ring molds, you can halve the quantities.
Adjust according to the mold you have available.
I used whole wheat durum semolina and tritordeum flour.
What is tritordeum?
Tritordeum is a new cereal resulting from the natural cross between durum wheat and wild barley that seems to provide excellent glycemic responses [to be personally tested].
It is not easily found in supermarkets, so I started buying it online, the most well-known brands are Selezione Casillo and Uniqua.
What flour can I substitute for tritordeum flour?
• if you don’t have tritordeum flour, you can substitute it with low glycemic index mix from Molino Spadoni or with durum wheat semolina or whole wheat durum semolina or whole wheat flour [whole wheat semolina and flours: which I use in my doughs].
Water ring cake, irresistible and light.
• without butter due to hyperglycemia.
• without milk and eggs due to a matter of personal taste.
It is a sugar-free batter but if you feel the need, you can sweeten it by adding the sweetener you usually use.
Consider that, between unsweetened cocoa and unsweetened coffee, for a palate not accustomed to the absence of sugar, it might really be too little sweet.
I added dark chocolate in the form of delicious drops and finished with a light dusting of powdered sugar [optional].
Alternatively, you can cut and fill the ring cake with a layer of fruit-only sugar jam and/or decorate it with fresh fruit pieces.
I recommend preparing this type of batter in small quantities and consuming it within one or two days to enjoy its characteristics at best because naturally, due to the lack of certain ingredients, they tend to harden.

Ingredients
- 1 3/4 cups stone-ground whole wheat durum semolina
- 1 3/4 cups tritordeum flour
- 2/3 cups unsweetened cocoa powder
- 1 packet baking powder (16 g)
- 1/2 cup coffee (about 4 long)
- 1 1/4 cups water (or milk or plant milk)
- 1/2 cup sunflower seed oil
- 1/4 cup dark chocolate chips
- 1 pinch powdered sugar (optional)
- as needed fruit-only sugar jam
- as needed fresh fruit (in pieces)

Preparation
Pour into a bowl:
• the whole wheat semolina;
• the tritordeum flour;
• the sifted unsweetened cocoa;
• the sifted baking powder;

* coffee + water must equal a total of 1 2/3 cups [I prepared 4 long coffees with a pod for a total of 1/2 cup and used 1 1/4 cups of water].
Pour into a measuring cup:
• the coffee;
• the water [or milk or plant milk];
• the oil;
and quickly emulsify the three liquids.Transfer the liquids into the bowl with the dry ingredients and mix with a silicone spatula until you get a homogeneous and lump-free dough.
Prepare a ring mold.
• my simple silicone ring mold is 1.77 inches high and 12 inches wide.Distribute the chocolate chips at the bottom of the mold, before pouring in the batter, so that when you flip the ring cake [cake/loaf/muffin/small rings] after baking, they will be on the surface of the ring cake.
Pour the batter into the mold over the chocolate chips.
Preheat the oven briefly.
Bake at 356°F for 5 minutes in a convection oven.
Lower the temperature to 329°F and let it bake for another 40 minutes.
Temperatures and times may vary from oven to oven and based on the size and shape of the mold used.For safety, perform the toothpick test.
Turn off the oven and let the ring cake rest for a few minutes before taking it out of the oven.
Your whole wheat cocoa and coffee ring cake without butter, milk, and eggs is ready.

If, between unsweetened cocoa and unsweetened coffee, for a palate not accustomed to the absence of sugar, it should really be too little sweet, you can finish with a light dusting of powdered sugar [optional] or alternatively, you can cut and fill the ring cake with a layer of fruit-only sugar jam and/or decorate it with fresh fruit pieces.
Or accompany it with light ricotta coffee cream.
We indulge in them at breakfast, as a substitute for whole wheat toast or whole wheat semolina bread with jam in the typical breakfast.
They are a valid alternative to packaged cookies and sweets which, due to their sugar and fat content, are not suitable in case of hyperglycemia, prediabetes, and type 2 diabetes.
