The whole wheat dough with hemp flour for bread and pizza [but not only] is an extra fiber-rich dough.
I bought the hemp flour at an organic store.
The hemp flour is obtained from milling the seeds, so the correct term is hemp seed flour.
It is characterized by valuable properties:
• contains all essential amino acids;
• gluten-free;
• rich in omega 6 and omega 3 fatty acids;
• high in fiber;
• high in minerals and vitamins.
It offers protective and strengthening effects on the immune, hormonal, and nervous systems, thus considered a “nutritional vaccine”.
From the package:
Hemp flour [Cannabis Sativa] is ideal when mixed with other flours for baking sweet and savory goods and homemade pasta. For best results, use up to 20% hemp flour of the total recipe.
Elsewhere, I’ve found an indication to use 5% to 10% hemp flour of the total recipe.
I tested it by adding 10% to the whole wheat bread and pizza dough with tritordeum 24-hour leavening, but proportions and procedures are valid for any dough.
The whole wheat dough with hemp flour proved to be particularly elastic.
The bread and pizza made with whole wheat dough with hemp flour were especially digestible and fiber-rich, soft, with exceptional taste.

Preparation
Prepare your dough.
On the blog, you’ll find numerous recipes with whole wheat semolina and flours:
• doughs with whole wheat flour;
• recipes with a bread machine.You only need 25 g of hemp seed flour to add to the semolina or flour or a mix of semolina|flours used.
Then, follow the procedure outlined in the chosen recipe from dough making to leavening to baking.
Shape your dough, divide it into portions or roll it out as needed for bread and pizza.
Let it rest for at least three hours [covering with a cloth or inside the completely turned-off oven].
Proceed with your preparation:
• top and bake the pizza;
• continue by baking the bread.Temperature and times may vary from oven to oven and based on pizza thickness and bread shape.
