Ingredients

  • 3.5 oz whole wheat semolina (from durum wheat)
  • 0.07 oz baking soda
  • 0.04 oz salt
  • 0.07 oz ground cinnamon (about)
  • 0.07 oz ground ginger (about)
  • 0.35 oz coconut sugar (whole or the sweetener you usually use)
  • 3.5 tbsp water (or milk or plant-based milk)
  • 2 tbsp sunflower oil
  • 1 tsp lemon juice

Preparation

– absence of butter;
– little whole coconut sugar with a low glycemic impact or sweetener with zero glycemic impact.

  • In a bowl, mix:
    –  3.5 oz of whole wheat semolina;
    –  0.07 oz of baking soda;
    –  0.04 oz of salt;
    –  0.07 oz of cinnamon;
    – 0.07 oz of ginger;
    – 0.35 oz of sifted whole coconut sugar and also add the part that does not go through the sieve or you can replace coconut sugar with the sweetener you usually use;
    and mix with a silicone spatula.

    Pour into a measuring cup:
    –  3.5 tbsp of water or milk or plant-based milk if you prefer;
    –  2 tbsp of sunflower oil;
    –  1 tsp of lemon juice;
    and quickly emulsify the three liquids.

    Pour the liquids into the bowl with the dry ingredients and knead with your hands until you get an elastic dough.

    Form a loaf, place it in a freezer bag or wrap it in plastic wrap and let it rest in the fridge for at least 30 minutes.

  • Once the spiced dough is prepared, you can give the cookies any shape.

    After 30 minutes, remove the dough from the fridge and roll it out with a rolling pin to a thickness of 0.2-0.4 inches.

    Line a baking tray with parchment paper to place the cookies on.

    Cut the cookies into the desired shape and place them on the baking tray.

    Re-knead the scraps and cut out more cookies until all the dough is used up.

  • To make cookies to hang on the tree, use two cutters of the same shape in different sizes to create hollow cookies in the center to thread the ribbon through.

    To achieve perfect shapes that don’t deform when handling double molds:
    – cut out the large star without removing it, leaving it inside the mold;
    – cut out the small star and remove it with the mold;
    now you have the large star with the central hole, remove it with the mold.
    Gently separate the stars from the molds.

  • Preheat the oven.
    Bake in a convection oven at 356°F for about 10 minutes until the cookies are evenly golden.
