Whole Wheat Pasta in Light Cod Broth

The cod broth made with frozen cod fillets is a quick and easy white fish broth to prepare: the frozen cod fillets do not need to be thawed.

Cod is a relatively lean fish, with tender and digestible flesh, it is a source of omega-3 fatty acids and contains 43 mg of cholesterol per 100 g of raw cod.
For an appropriate dietary intake of cholesterol, a daily consumption of less than 300 mg is recommended.

The cod broth made with frozen cod fillets is tasty and light, and due to the absence of bones, we can define it as a cod broth suitable even for the little ones.

It is good with pasta [we used whole wheat pasta] and with rice.
In the case of brothy first courses, to avoid glycemic spikes, it is advisable to cook the pasta separately, then rinse it and add it to the prepared brothy sauce separately; this way, the starch released by the pasta in the cooking water is eliminated.

The whole wheat pasta in cod broth is a single dish as it concentrates the characteristics that distinguish a balanced meal in a single course.

Ingredients

  • cod fillets (frozen)
  • 200 ml water
  • 1 vegetable stock cube (homemade)
  • parsley (stems)
  • celery (stems)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste chopped parsley
  • 1 drizzle extra virgin olive oil (raw)
  • 160 g whole wheat conchigliette

Suggested Tools

  • 1 Saucepan with lid
  • 1 Spatula silicone

Preparation

  • The frozen cod fillets do not need to be thawed.
    Rinse the frozen cod fillets under running water to remove any ice glaze.

  • In a saucepan, pour 200 ml of water and bring it to a boil.
    Add a vegetable stock cube and stir to dissolve it in the water.
    Add parsley stems and/or celery stems for flavor.
    Place the cod fillets at the bottom of the saucepan and cook with a lid over low heat for 10 minutes.
    Add a pinch of salt and a pinch of pepper.
    * if you prefer, remove the parsley stems and/or celery stems from the broth with the help of kitchen tongs.

  • Turn off the heat, and using a wooden spoon or a silicone spatula, flake the cod fillets to the desired size.

  • Your cod broth is ready.

  • In a separate pot, cook the pasta and drain it.
    In case of brothy first courses, to avoid glycemic spikes, it is advisable to cook the pasta separately, then rinse it and add it to the prepared brothy sauce separately; this way, the starch released by the pasta in the cooking water is eliminated.

    Meanwhile, bring the cod broth back to a boil.
    Pour the pasta into the saucepan with the cod broth and mix.

    Serve.
    Grind some more pepper, add parsley, and drizzle with a bit of olive oil.

    Your whole wheat pasta in cod broth is ready.
