Whole wheat pasta with asparagus and shrimp is a dish with an enveloping and tasty sauce.
I used:
• wild asparagus which you can substitute with cultivated asparagus [I buy the whole ones steamed and frozen];
• shrimp tails which you can substitute with shrimp or prawns according to availability and taste.
Briefly, it should be remembered that they are crustaceans low in triglycerides but high in cholesterol and contain a small portion of available carbohydrates, which is why they are not indicated and included in all diets.
This applies to all species of shrimp [from prawns to shrimp].
In my husband’s diet, shrimp are present and classified as foods to be consumed occasionally.
Whole wheat pasta with asparagus and shrimp is a single dish as it concentrates the characteristics that distinguish a balanced meal into one course.

Ingredients
- 5.5 oz rustic whole wheat tagliatelle
- 1 bunch wild asparagus
- 9.2 oz shrimp tails
- 1 pinch garlic, oil & chili pepper seasoning
- 0.42 cups water
- 1 vegetable bouillon cube (homemade)
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- 1 drizzle extra virgin olive oil (raw)
Preparation
Clean the wild asparagus:
• wash them under running water and let them drain in a colander;
• separate the tips up to the most tender part of the stem and cut them into pieces;
• retrieve the shoots of the stem discarding the thorns [if any];
• remove the terminal part of the stems [cut and damaged].[stems]
The terminal part of the stems can be used to flavor the pasta cooking water.* alternatively you can use cultivated asparagus [I buy the whole ones steamed and frozen].
After thawing, peel the shrimp tails.
Make an incision on the back and with the help of a toothpick extract the vein, rinse them thoroughly under running water and move them to drain in a colander.* alternatively you can use shrimp or prawns.
In a hot pan or wok, toast the garlic, oil & chili pepper seasoning.
Add the tips [and any shoots] of the asparagus, 0.42 cups of water [or more if the pan is wide] and optionally a vegetable bouillon cube [optional].
Add a pinch of salt and a pinch of pepper.
Mix and let it cook with a lid on low heat for about 5 minutes until the water has evaporated and the sauce is well reduced.Add the shrimp tails to the pan with the asparagus, stir and sauté until they change color evenly.
In a pot, bring salted water with the asparagus stems to a boil and remove them before adding the pasta.
Cook the pasta, rinse it under running water, and drain it.Meanwhile, heat the sauce.
Add the pasta to the pan with the sauce and mix.
Turn off the heat, add a drizzle of oil, and mix.Plate the dish.
Grind some more pepper.Your whole wheat pasta with asparagus and shrimp is ready.
