Whole Wheat Pasta with King Oyster Mushrooms

Whole wheat pasta with king oyster mushrooms is a simple main course.

The mushrooms I often buy during the fall and winter are king oyster mushrooms [Pleurotus Eryngii] from local sources [Chiaramonte]: meaty, firm, flavorful, and versatile.
In the absence of king oysters, you can use button mushrooms or champignons, pleurotus, or whichever you prefer and find available.

Regarding mushroom cleaning: despite various opinions, mushrooms should always be washed and dried thoroughly before use.
Personally, I decide based on the type purchased and the cleanliness level: I usually buy them in containers, and they are always quite clean, possibly rinsing them under running water, paying particular attention to the space between the gills [plates under the cap] and the usually earthy stem, then letting them drain in a colander.
In the case of button mushrooms, I peel the mushroom cap with a small knife.

I prepared a white sauce with king oyster mushrooms, enveloping and creamy without cream, perfect for a light mushroom pasta.

With the addition of shaved Grana Padano or lean speck, in the gram amounts provided by our dietary plan, the whole wheat pasta with king oyster mushrooms can be transformed into a single dish that concentrates the characteristics of a balanced meal into one serving.

Whole Wheat Pasta with King Oyster Mushrooms

Ingredients

  • 5.5 oz whole wheat tagliatelle (rustic)
  • 8.8 oz king oyster mushrooms (or button mushrooms or pleurotus)
  • 1 pinch garlic powder
  • 1 small glass white wine (or red [according to taste])
  • 1 vegetable bouillon cube (homemade)
  • 1/4 cup water
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste parsley (chopped)
  • 1 drizzle extra virgin olive oil (raw)

Preparation

  • King Oyster Mushrooms
  • Rinse the mushrooms under water, drain them, and slice or chop them.

    In a hot pan, brown a sprinkle of garlic powder.
    Deglaze with a small glass of white or red wine [according to taste].

  • Add the mushrooms to the pan, stir, and sauté until the wine is completely evaporated.

    Add a cube of homemade vegetable bouillon and pour the water over it.
    Add the salt and grind the pepper.

    Let it cook covered on low heat for about 10 minutes until the sauce thickens.

    Turn off the heat, add the parsley.

  • Cook the pasta, rinse it under running water, and drain it.

  • Meanwhile, reheat the mushrooms.

  • Place the pasta in the pan with the sauce and mix.

  • Turn off the heat, add the oil, and mix.

  • Plate the dish.
