The pasta ammuddicata or pasta ca muddica is a humble dish from the Sicilian tradition. Today I prepared it this way: whole wheat pasta with lemon breadcrumbs and shaved grana.
The ingredients are simple, but the result is a masterpiece of flavors: a kind of garlic, oil, and chili pepper dish topped with a frequently recycled ingredient.
I used some toasted whole wheat breadcrumbs moistened with lemon juice and extra virgin olive oil to form crumbs and seasoned with pepper.
Alternatively, you can use finely chopped whole wheat bread crumbs.
A couple of tablespoons are enough, but adjust to your taste, keeping in mind the total carbohydrate count of your meal.

Ingredients
- 6 oz whole wheat spaghetti
- 2 tbsps whole wheat breadcrumbs
- 1 pinch mixed peppercorns (with grinder)
- 2 tsps lemon juice
- 1 tsp extra virgin olive oil (raw)
- 2 g garlic, oil & chili pepper mix
- 1 drizzle extra virgin olive oil
- to taste parsley (chopped)
- to taste grana padano (shaved)
- 1 pinch mixed peppercorns (with grinder)
Preparation
Pour the whole wheat breadcrumbs into a small non-stick pan and stir with a silicone spatula over low heat until golden [be careful: whole wheat breadcrumbs are already quite dark in color].
Transfer the toasted whole wheat breadcrumbs to a bowl.
Grind the pepper and add:
• two teaspoons of lemon juice;
• one teaspoon of extra virgin olive oil;
and blend to create flavored crumbs.In a hot pan, toast the garlic, oil & chili pepper mix and turn off the heat.
Off the heat, pour a little oil over the mixture [just enough as we will finish the dish with another fat source: shaved grana].
Cook the pasta, rinse it under running water, and drain it.
Meanwhile, gently heat the dressing [the oil should not cook] and then add the pasta to the pan with oil and mix.
Turn off the heat [the cheese should only soften, not melt], and add:
• plenty of parsley;
• the crumbs [not all, keep a handful aside];
• shaved grana [not all, keep a handful aside];
and mix.Plate the dish.
Finish with the reserved crumbs and shaved grana.
Grind a bit more pepper.Your whole wheat pasta with lemon breadcrumbs and shaved grana is ready.

Prepare the crumbs.
Toast the garlic, oil and chili pepper pasta mix.
Place it in a large bowl where you’ll dress the pasta.
Drizzle with raw oil and mix.Cook the pasta, rinse it under running water, and drain it.
Add it to the bowl with oil and mix.
Finish preparing in the bowl.
