The whole wheat pasta with pumpkin and light speck is a dish with an enveloping and tasty sauce.

I added pumpkin in the form of light pumpkin soup [which I had ready in the freezer], but if necessary, just boil and blend it.

Pumpkin of any type → GI 75.
Besides the glycemic index, it is important to consider the glycemic load which is determined by the quantity of food consumed.
Pumpkin has a high glycemic index but a low glycemic load.

Ingredients
- 5.6 oz whole wheat penne
- as needed pumpkin soup (or boiled and blended pumpkin)
- 2 slices speck (thick)
- 1 pinch mixed peppercorns (with grinder)
- as needed parsley (chopped)
Tools
- 1 Immersion blender
- 1 Glass tall and narrow for immersion blender
Preparation
Clean the pumpkin and follow the procedure described to prepare the light pumpkin soup.
I used about 3-3.5 oz of cleaned pulp.
Or, simply add some boiled and blended pumpkin.Place the slices of speck on a cutting board and use a knife to remove the rind and all the fat.
Cut into cubes or strips.
Heat a non-stick pan [where you will later toss the pasta].
Add the speck and brown it on all sides, turning it with a silicone spatula.
When it becomes crispy, turn off the heat and transfer it to a plate on a paper towel.***
Cook the pasta, rinse it under running water, and drain it.
Meanwhile, add the speck back into the pan [the same one where it was browned] and heat it up.
Pour the light pumpkin soup into the pan with the speck and bring it to a boil.
Add the pasta to the pan with the pumpkin and speck and mix.
Grind the pepper.
With the heat off, add the parsley and mix.
Plate it.
Your whole wheat pasta with pumpkin and light speck is ready.
