Whole Wheat Pasta with Raw Sauce

Whole wheat pasta with raw sauce is an easy and quick summer pasta: the only thing to cook is the pasta!

The raw sauce is a raw dressing, to be prepared in advance and left to rest in the fridge or last minute and used on the spot.

Cheese, which one to use?
Cheese should be consumed no more than twice a week, in small doses and preferring fresh cheeses like low-fat ricotta.
• cottage cheese, ricotta, cacio ricotta;
• mozzarella, provolone, scamorza in cubes or small pieces;
• Grana Padano or Parmigiano Reggiano in flakes.
I used a primosale cheese.

Whole wheat pasta with raw sauce is a complete meal as it concentrates the characteristics that distinguish a balanced meal in a single course.

Whole Wheat Pasta with Raw Sauce

Ingredients

  • 5.6 oz whole wheat fusilli
  • 2 anchovies in oil (well drained)
  • to taste salted capers
  • to taste cherry tomatoes
  • 12 green olives in brine (pitted)
  • primosale cheese or other (grams according to dietary plan)
  • 1 pinch mixed peppercorns (with grinder)
  • to taste basil

Tools

  • 1 Bowl or Salad Bowl

Preparation

  • Drain the anchovies well and let them dry on a sheet of kitchen paper.
    Break them into pieces with a fork.

    Rinse and squeeze a handful of capers and chop them finely with a knife.

    Wash the tomatoes thoroughly.
    Cut and remove the stem part if deemed necessary.
    Cut each berry vertically, dividing it in half or into four wedges.

    Drain and rinse the olives.

    Cut the cheese into cubes or small pieces.

    In a large bowl or salad bowl, add:
    • the anchovies;
    • the capers;
    • the cherry tomatoes;
    • the olives;
    • the cheese;
    grind the pepper and mix.

    If deemed necessary, add a drizzle of raw oil.

    Your raw sauce is ready… to be left to rest in the fridge or used immediately.

  • Cook the pasta, rinse it thoroughly under running water to cool it, and let it drain well.

    Add the pasta to the bowl with the raw sauce and mix.

    Plate.
    Grind a bit more pepper and add the basil leaves.

    Your pasta with raw sauce is ready.
