Whole wheat pasta and red peeled lentils or pasta with peeled lentils is irresistibly creamy.

Peeled red lentils are reddish dry lentils ranging from orange to yellow without the outer skin.
If you need to reduce fiber, peeled red lentils are the alternative to whole lentils with skin.

Ingredients

Adjust the quantities of pasta and legumes according to your diet plan.

  • 1 cup mixed pasta (whole wheat)
  • peeled red lentils (2 servings, weight according to diet plan)
  • 1/2 cup water (or more)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 1 drizzle extra virgin olive oil (raw)

Preparation

  • Prepare the peeled lentils following the procedure described in cooking peeled red lentils | basic recipe or, if you have them ready in the freezer, defrost them.

  • Pour the lentils into a casserole, add about 1/2 cup of water and bring to a boil.

    Cook with a preferably glass lid, stirring occasionally until the lentils reach the desired consistency.
    Peeled lentils break down and blend with the cooking liquid to achieve a creamy and thick consistency.
    Adjust the salt.

  • In another pot, cook the pasta al dente, drain it and rinse it quickly under running water.
    In case of brothy first courses, to avoid glycemic peaks, it is advisable to cook the pasta separately and then rinse it and add it to the brothy sauce prepared separately; in this way, the starch released from the pasta in the cooking water is eliminated.

    Meanwhile, bring the peeled lentils back to a boil.

    Add the pasta and stir.

    Plate.
    Grind the pepper and drizzle with extra virgin olive oil.

    Your whole wheat pasta with peeled red lentils is ready.
