Apple and Blueberry Cake

The apple and blueberry cake is a super tasty and fragrant treat, made with water and without too much fat. Yes, a wonderful light water cake with lots of fruit.

Ingredients

  • 2 eggs (whole)
  • sugar (60g you can increase up to 80/90g if you prefer)
  • vegetable oil (1/3 cup)
  • water (3/4 cup)
  • 1 pinch fine salt
  • orange zest (grated)
  • 1 orange (juice)
  • flour (2 1/2 cups)
  • potato starch (1/2 cup)
  • 1 packet baking powder
  • 2 apple (for garnish and for the interior)
  • as needed blueberries (for garnish)
  • 1 teaspoon vanilla essence
  • as needed chocolate chips

Steps

  • First, take a bowl and add the eggs (which you have left at room temperature) together with the sugar. Beat them until they are light and fluffy.

    Now add a pinch of salt, the oil, water, vanilla essence, chocolate chips, orange zest, and juice. Cut one of the apples into cubes and add it to the mixture. The other apple will be used for decoration on the surface.

    Mix well. Now, incorporate the sifted flour and potato starch. Lastly, add the packet of vanilla baking powder.

    Continue to stir the mixture until it becomes smooth and foamy.

  • Butter and flour the baking dish. I used a 22 cm diameter pan. Pour the mixture and decorate with apples and blueberries.

    I took the apple, removed the central core, and sliced it. I lightly floured the slice to prevent it from sinking into the batter and placed it on the cake with a blueberry in the center of the hole. I also scattered some chocolate chips.

    Bake in a preheated oven at 350°F, static mode for about 40/45 minutes.

    Always do the toothpick test before turning off the oven. The cake should be dry, and the toothpick should not stick. Adjust according to your oven.

Storage

The cake can be stored in the fridge for 3/4 days. It is important not to leave it at room temperature because, although there is fresh fruit, even if cooked, it can spoil and ruin the goodness of the dessert, making it go bad.
