The thin and crispy baked potato chips, cooked with a little oil to obtain a light, tasty snack perfect to serve as an appetizer or side dish.

Since I started making them this way, we’ve all fallen in love with this recipe.

Baked potatoes are always good, but in my opinion, if you try this version, it will win you over, especially the little ones.

Ingredients

  • 2 lbs potatoes (about 4, preferably yellow-fleshed)
  • 2 tbsp extra virgin olive oil
  • to taste fine salt
  • spices (to taste rosemary, oregano, pepper, paprika, garlic powder)

Steps

  • Wash and peel the potatoes (you can leave the skin on if you prefer a rustic style).

    Cut them into very thin slices: it’s ideal to use a mandoline to obtain uniform thickness.

    Put the slices in a bowl with cold water and let them soak for 15/20 minutes.

    Rinse them several times to remove the starch.

    Drain and dry them very well with a cloth or paper towel: it’s essential to get the crispness.

  • Place the slices in a bowl and season them with a little oil.

    Add the salt and, if you like, the spices you prefer.

    Mix gently to distribute everything evenly.

    Line a baking sheet with parchment paper.

    Arrange the slices without overlapping them.

    Bake at 375–400°F for 15–25 minutes, flipping them halfway through.

    They’re ready when they appear golden and crispy.

    Remove from oven, adjust the salt, and serve immediately to enjoy them at their maximum crispness.

How to Store Baked Potato Chips

If any baked potato chips are left over, let them cool completely: this is crucial; even a little residual heat creates moisture, and the chips become soft.

Store them:

Airtight container that is dry
or
Glass jar with a snap closure

Avoid unsealed containers: the moisture in the air will make them soft.

ADVICE:

Check during the last few minutes of cooking: they tend to brown quickly.

For a fragrant version, add chopped rosemary or smoked paprika after baking.
