Steps
Pour the oil into the saucepan (which we will keep off the stove), start adding the flour gradually and with a fork or a hand whisk, begin to mix the two ingredients, until the liquid is completely absorbed by the flour.
Once the roux is formed (thickened the oil with the flour), move the saucepan to the stove, turn on to low heat, and begin to pour in the milk.
Add the salt and nutmeg. At this stage, it is important to keep stirring the mixture to prevent lumps.
When the mixture starts to boil, raise the heat slightly, and you will see that it will also start to thicken. The trick for a smooth and silky bechamel is not to rush the cooking and not to get tired of stirring.
