Ingredients
Let’s see the ingredients we need to make the recipe
- 4 cups cups all-purpose flour (or type 1 or spelt or 00)
- 1/4 cup cup dried sourdough
- 2 tsp tsp fine salt
- 1 1/3 cups cups water (300 ml in the dough + 30 ml to dissolve the salt)
- 1/3 cup cup mixed seeds (optional)
Tools
- 1 Stand Mixer
- 1 Bowl
- 1 Fork
- Parchment Paper
- Baking Mats
- Baking Sheets
- 1 Teaspoon
Steps
It will be very simple. In the bowl of the stand mixer or in a bowl, pour all the ingredients.
Add the flour, the dried sourdough and 1 1/3 cups of water and start mixing. After a few minutes, add the 30 ml of water in which you have dissolved the salt.
I prefer to add the salt last to avoid interfering with the leavening.
Once ready, let the dough rest for an hour covered. Take it back, if you like, give it two folds and then shape the dough into rolls or loaves and place them on floured parchment paper or on a special mat. Let them rest for another two and a half hours.
After resting and doubling in size, you can leave it plain or decorate the surface, adding seeds as you like. Before sprinkling the seeds, I brushed the surface of the bread with extra virgin olive oil.Preheat the oven to 375°F and bake for about 30 minutes in a static mode. The baking time varies depending on the size of the rolls or if it’s a whole loaf.
Before turning off the oven, always do the toothpick test to verify that the inside of the preparation is dry and cooked.
Once ready, the bread will have a nice crust on the outside and be soft on the inside.
I can only wish you enjoy your meal.
Storage
The bread with dried sourdough keeps for one/two days in a suitable bag or bread bag.
If you want, you can also freeze it and use it as needed, making sure to heat it in the oven before consuming it. With this step, the crust will regain its crunchiness.
