Ingredients
Let’s see what we need to make buckwheat and pine nut cookies
- 1 egg
- 1 1/4 cups buckwheat flour
- 1/3 cup vegetable oil
- 1 pinch fine salt
- 3 tbsps sugar
- 1 oz chocolate chips (optional)
- 1 tsp liquor
- 3/4 cup nuts (50g almonds + 40g mixed seeds)
- to taste pine nuts
Steps
In a bowl, place the room temperature egg, sugar, oil, a pinch of salt, chocolate chips, and a teaspoon of liquor and start mixing.
Now separately, mix together the buckwheat flour, almonds, and previously chopped mixed seeds and gradually add them to the liquids already in the bowl.
Mix well until it is no longer possible to stir the ingredients with a fork and you’ll need to proceed manually to handle the dough.
Once the dough is ready, it should be compact but soft.
Now shape the dough into a cylinder and start cutting the cookies with a knife. The thickness is about a finger.
Place the cookies on the baking tray lined with parchment paper, add the pine nuts on top, and bake at 356°F, preheated convection oven for about 10/11 minutes.
