The buckwheat and pine nut cookies are sweet treats that smell of goodness, rustic charm, and home. If you make them again, you’ll enjoy the taste of buckwheat and nuts that together create a fantastic combination.

If you like cookies made with less refined flours, you absolutely have to try them. I assure you that one leads to another, and once you read the ingredients, you’ll see that they also offer lightness.

I made them with excellent Ruggeri flour. I’ll leave the clickable link here so you can see and, if you like, purchase these wonderful products➡️ Farine Ruggeri

Ingredients

Let’s see what we need to make buckwheat and pine nut cookies

  • 1 egg
  • 1 1/4 cups buckwheat flour
  • 1/3 cup vegetable oil
  • 1 pinch fine salt
  • 3 tbsps sugar
  • 1 oz chocolate chips (optional)
  • 1 tsp liquor
  • 3/4 cup nuts (50g almonds + 40g mixed seeds)
  • to taste pine nuts

Steps

  • In a bowl, place the room temperature egg, sugar, oil, a pinch of salt, chocolate chips, and a teaspoon of liquor and start mixing.

Now separately, mix together the buckwheat flour, almonds, and previously chopped mixed seeds and gradually add them to the liquids already in the bowl.

Mix well until it is no longer possible to stir the ingredients with a fork and you’ll need to proceed manually to handle the dough.

  • Once the dough is ready, it should be compact but soft.

Now shape the dough into a cylinder and start cutting the cookies with a knife. The thickness is about a finger.

Place the cookies on the baking tray lined with parchment paper, add the pine nuts on top, and bake at 356°F, preheated convection oven for about 10/11 minutes.

  • Are you ready for a treat?

Take them out of the oven and enjoy these super tasty cookies.

Storage and Tips

With these quantities, you will get about 23 cookies. You can store them in a tin box or a glass biscuit jar with an airtight lid.

Hello, I'm Simona, and my page is called BriCciola in cucina, because I dedicated it to my mom and dad, who have called me that since I was little. I'm not a chef, and in my life, I've always dealt with completely different things, but cooking, along with dancing, has always been one of my great passions. However, my greatest inspiration came from the dishes prepared first by my grandmother and now by my mom. Here on my cooking blog, I'll guide you from appetizers to desserts, with recipes designed for a healthy and mindful lifestyle. Balanced dishes, carefully chosen ingredients, and lots of flavors, because eating well never means giving up pleasure. I love eating, but I also like taking care of my health, my family's health, and, in a way, the health of everyone who tries my recipes. That's why daily life should be rich in flavor, but always with a focus on healthy eating. Thank you, I look forward to seeing you.
