Butter Smile Cake

The butter smile cake originates from a very simple water cake with the addition of excellent melted butter in the dough.

A simple dessert to make that will give you satisfaction for its genuineness, but above all for its soft texture.

The addition of chocolate chips and two tablespoons of jam will make it truly a delicious and satisfying treat, for us and our guests.

Why did I call it smile? Because during baking it rose so well, creating a crack on the surface that reminded me of a smile.

I used puffed millet to make the mouth and eyes, so as to bring a smile to both adults and children.

Ingredients

  • 2 eggs
  • 2.1 oz sugar
  • 5.6 tbsp butter (melted)
  • 1 packet vanillin
  • 1 tbsp liqueur (for desserts)
  • 0.35 cup potato starch
  • 0.7 cup rice flour
  • 1.7 cup type 1 flour
  • 1.2 cup water
  • 1 packet baking powder
  • 1 pinch fine salt
  • 2 tbsp jam (I chose peach)
  • 2 tbsp chocolate chips

Steps

  • In a bowl pour the room temperature eggs and sugar.

    Start to whisk into a foam with the beaters, add the pinch of salt.

    To flavor, add half a vial of millefiori or other essence like orange blossom and the dessert liqueur.

    Now add the melted butter and water, continuing to mix with the beaters.

    Once the liquids are done start adding the sifted powders, type 1 flour and rice flour, potato starch, and baking powder.

    Be careful not to use the beaters at too high a speed, or the flour will scatter everywhere.😉

    At this point, to mix the dough, you can also leave the beaters and use the spatula.

  • When the mixture is ready, take our 22 cm pan and go to butter and flour it.

    If you prefer, you can line with compostable parchment paper.

    Pour half of the batter into the pan and add in the center the 2 tablespoons of jam and the chocolate chips.

    I tell you to stay more towards the center, so it doesn’t spill from the edges.

    Cover with the remaining batter.

    Now bake at 350°F in a preheated convection oven for about 40 minutes.

    Always do the toothpick test before removing from the oven.

    If necessary, leave it a few more or fewer minutes. Always adjust based on the power of your oven.
