Cereal Cookies with Cocoa and Chocolate

Today, I want to tell you about my crunchy cookies with cocoa, chocolate, and cereals, which are a blend of indulgence and genuineness. These treats are made with many ingredients, but if you look at the quantities, you’ll realize how little there is of each. Sometimes finding the right balance makes everything tastier and healthier. Ingredients

Let’s see what ingredients we need to prepare them.

  • rolled oats (1/2 cup)
  • rice flour (3/4 cup)
  • sugar (1/4 cup, but you can use 1/3 cup)
  • dark chocolate (1 oz chopped)
  • unsweetened cocoa powder (1 tbsp)
  • hazelnuts (1/3 cup chopped)
  • baking powder (1/2 tsp)
  • vegetable oil (2 tbsp)
  • water (1/3 cup)

Steps

Great, now let’s move on to the process and steps to follow.

  • For this little recipe, we’ll start with the dry ingredients this time. Take a bowl, or if you prefer, a work surface and start pouring in the rolled oats, rice flour, sugar, cocoa powder, chopped hazelnuts, baking powder, and chopped chocolate. If you prefer to use chocolate chips instead of chopping pieces, that’s also fine. Mix everything well and form the classic well.

    Now pour the oil slowly into the center and the water, and with a fork, or if you prefer, with your hands, start mixing the two liquids and gathering the dry ingredients until completely absorbed. You should create a nice, homogeneous dough as seen in the photo below, which you’ll leave to rest in the fridge, covered, for an hour.

  • After the necessary time has passed, take the dough, roll it out with a rolling pin, and start creating shapes. Don’t worry if the mixture tends to crumble a little; try to assemble it by dusting your hands with flour, and you’ll see there won’t be any problems. Then lay them out on parchment paper. I wanted to give them the classic round cookie shape because they reminded me a lot of a well-known cereal cookie often advertised on TV, which I believe most of us have tasted at least once. Bake the cookies as soon as the oven reaches temperature, 340°F, fan mode for 15/20 minutes. I leave them for about 18 minutes; check them because if they stay a few minutes longer, the chocolate will roast and become bitter.

  • Here we are, can you smell the aroma in the air? Oh my, they are so good. Take them out of the oven, let them cool for a few minutes, and enjoy.
