Ingredients

- 9.2 oz Kamut® flour
- 1/4 cup extra virgin olive oil
- 1 1/8 cups milk
- 0.35 oz fresh yeast
- 8.8 oz all-purpose flour
- 1 1/2 tsp fine salt
- 2 3/4 tbsp milk (for brushing the surface)
- 1 tsp sugar
- 2.1 oz pecorino (Cut into cubes)

Steps
Just a small preamble before diving into the recipe explanation.
I made the buns with two mixed flours, but if you prefer to use just one type, it will be fine.
The Kamut® flour worked great in this recipe, and I recommend trying it, but as I said, if you prefer to use one, whether type zero, double zero, or type 1, they will all work equally well.
In a bowl, pour the flour and add the sugar. Mix the two ingredients and then add the oil. Mix again and also add the salt.
In a measuring jug or whatever you have available, dissolve the fresh yeast in lukewarm milk. Make sure it’s not hot, otherwise it will affect the leavening.Add this mixture to the flours and mix until a dough forms.
With a knife, make a kind of cross cut on the dough. Then, let it rise in a covered bowl in a place sheltered from drafts for at least 3 hours. The dough should be well risen before proceeding with the shaping.
While the bread is rising, cut the cheese into cubes.
After this time, take the dough and tear off pieces. Make balls weighing 1.2 oz each. Once you have weighed the ball, spread it between your hands or on the pastry board, and place the cheese cubes in the center.
I chose pecorino, you can also use Gruyere, or Asiago, or any firm cheese. Once the cheese is placed, roll the bun again between your hands and place it on the baking sheet lined with parchment paper.
Let the buns rise again for about an hour.
After this time, the bread balls will be nice and puffy, and we will brush the surface with milk before baking. Preheat the oven to static mode at 356°F and bake for about 20/25 minutes. Always adjust based on your oven. Do the skewer test, and if ready, turn off the oven and take out.
You can make this dough with a stand mixer or by hand. Decide how to proceed.

Cheese filled buns can also be stored in the freezer. When ready to use, just take them out of the cold and let them thaw either at room temperature for a few hours or by placing them in the oven for a few minutes.
