Once the dough is ready, it will be your hands that will turn the balls of dough into cookies, imperfect but crumbly and delicious.

Ingredients

  • 1 tbsp chia seeds
  • 3/4 cup oat flour
  • 1 egg
  • 2.5 tbsp raw cane sugar (you can add up to 1/3 cup)
  • 1 pinch salt
  • 4 tsp liqueur (of your choice for desserts)
  • 2 tsp baking powder
  • 4 tbsp extra virgin olive oil
  • 1/2 cup remilled durum wheat semolina flour (whole grain)
  • 1/4 cup unsweetened cocoa powder

Steps

  • In a bowl, beat the egg with the sugar, add the oil, the liqueur until you get a homogeneous mixture.

    As for the sugar, I always keep it very low, I prefer to balance my treats so that everyone, both adults and children, can enjoy them, but you can add to my quantities.

    Add a pinch of salt and the dry ingredients to the liquid ones, mixing with a fork.

    If you find the dough too crumbly, add a little water or milk (10/15g) no more, until you get a soft but workable dough.

  • Form small balls, slightly flatten them and place them on a baking tray lined with a silicone mat (which I recommend) or parchment paper.

    Bake in a preheated static oven at 350°F for 12-15 minutes.

    Let them cool: they will be soft when hot, but will become crumblier as they cool.
