The chocolate chip cookies are shortbread cookies that you can prepare in 10 minutes, without even needing cookie cutters.
I shape them round by hand and with the help of a scale, they will all be the same weight, ensuring perfect baking.

Despite the presence of chocolate, don’t think these are super caloric shortbread, because that’s not the case.
In less than half an hour, you’ll prepare these healthy treats, low in sugar, with extra virgin olive oil and chocolate chips.

Ingredients
- 1 egg
- 2 tbsps brown sugar (if you prefer, white granulated sugar is also fine)
- 1 tsp almond essence
- 1 tbsp liquor (like rum)
- 1 oz chocolate (if you want, you can increase up to 2 oz)
- 1 packet vanillin
- 1 tsp baking powder
- 3.5 tbsps extra virgin olive oil (if you prefer seed oil, add 4 tbsps)
- 2/3 cup rice flour
- 1 cup buckwheat flour
- 1/4 tsp fine salt (a pinch)

Steps
In a mixing bowl, use a fork to start mixing together the egg, sugar, almond essence, and liquor.
Add a pinch of salt, the packet of vanillin, and the sifted baking powder.
Also, add the chocolate cut into chips
Gradually add the rice flour and then the buckwheat flour.
If you find you need a bit more than my amount, don’t hesitate to add it.
Sometimes, based on the type of flour you have at home, absorption may vary, and so will the amounts.
Once you have a soft dough, start shaping the cookies.
Place a food scale next to you.
Break off pieces of dough that should weigh between 1 oz and 1.25 oz each.
Obviously, with 1.25 oz of dough per piece, the cookies will be over-sized.
Decide the size yourself.
Roll them between your hands and then place the ball on parchment paper and flatten it to form your cookie circle.
I love them just like that, a bit imperfect; I find them even more rustic and homemade.
Turn on the oven to a convection setting at 350°F.
When it reaches temperature, bake the cookies for 13 minutes.

Chocolate chip cookies are stored in an airtight glass or tin cookie jar.
I keep them for 3 days and they’re always good.
