Hi friends, the recipe I’m proposing today is certainly a delicious and tasty one. However, don’t be fooled by appearances because a treat like this, which might seem like a calorie bomb, if you study the ingredients, you’ll notice it isn’t. The quantities are well balanced without excess. I’m offering them in a version with strawberries, but if they’re not in season, I’ve also made them without and they turned out super good. Ingredients
Let’s see the ingredients we need
- Type 1 flour (200g, I usually use type 1 or 2 flour)
- sugar (80g)
- 2 eggs (whole)
- unsweetened cocoa powder (40g)
- Greek yogurt (170g vanilla-flavored)
- 1 coffee cup milk (skimmed milk)
- 1 packet baking powder
- corn oil (60g)
- to taste ground cinnamon
- 3 tablespoons chocolate chips (dark or milk, as you prefer)
- strawberries (optional if not in season)
- to taste sugar sprinkles (optional)
- to taste grated coconut (optional)
Steps
Let’s see how to prepare our treats
Take a bowl and put the ingredients inside. Start with the eggs and sugar, then add the oil, yogurt, and coffee cup of milk. Begin mixing. Now add the cinnamon, cocoa, and 3 tablespoons of chocolate chips.
At this point, start incorporating the flour slowly. Lastly, add the packet of vanilla baking powder.
When the mixture is well combined, take the muffin molds and start pouring the mixture in. As you can see in the photo, I also use paper liners, which I think present better and you don’t have to add butter to the mold before pouring the mixture. Do as you prefer. If you don’t have paper liners, grease and flour the mold.
If strawberries are in season, you can make your muffin more delicious by adding some pieces of this fruit. Otherwise, they are delicious even without. For final decoration, I put some sugar sprinkles on some, and grated coconut on others. Act according to your taste and preference.
Now, bake the muffins at 356°F in static mode for about 25 minutes. Also for muffins, always do the toothpick test. Adjust according to the power and heat of your oven.
