Coffee and Chocolate Cookies

in

The coffee and chocolate cookies with melted chocolate are fragrant and delicious treats, perfect to accompany tea, coffee, or as a dessert.

Their aroma of coffee combines with the sweetness of chocolate, creating an irresistible balance.

The dough is made with simple ingredients: flour, sugar, oil, eggs, and coffee, which gives the cookies a strong aroma.

After shaping and baking in the oven, the cookies are allowed to cool and then dipped or decorated with melted chocolate, which solidifies to create a smooth and tasty coating.

If you love making homemade cookies, here are a few other recipes not to miss:

  • Difficulty: Very Easy
  • Cost: Very Cheap
  • Preparation time: 15 Minutes
  • Portions: 40 Pieces
  • Cooking methods: Oven
  • Cuisine: Italian
  • Seasonality: All Seasons

Ingredients

  • 1 coffee cup espresso coffee (espresso)
  • 2 eggs
  • 70 g brown sugar (you can also use white granulated sugar if you prefer)
  • 1 pinch salt
  • 95 g vegetable oil
  • 1 tablespoon liqueur (for desserts)
  • 1 packet baking powder
  • 3 1/4 cups type 1 flour (if using type 2, 3 cups are also fine)
  • 1/3 cup cornstarch
  • 5 chocolates (to melt for the coating)
  • to taste chocolate sprinkles (and sugar pearls if you like for decoration)

Tools

Below are the tools I used to make the recipe.

Next to some, like the silicone pastry board, the rolling pin, and the mat, I’ve also included the possible link to purchase them.

Just click on the Amazon icon that appears next to it.

I find silicone items very convenient because they are washable and reusable, although sometimes for some preparations I still use compostable parchment paper.

  • 1 Bowl
  • 1 Fork
  • 1 Sieve
  • 1 Coffee Machine or coffee pot
  • 1 Pastry Board in wood or silicone
  • 1 Rolling Pin
  • 1 Baking Mat in silicone or parchment paper
  • 1 Baking Sheet

Steps

  • Prepare the coffee:
Let the coffee cool and set aside.

In a large bowl, beat the eggs with the sugar until you get a light and frothy mixture.

Add the vegetable oil and cold coffee, mixing well.

Also add the tablespoon of dessert liqueur of your choice.

If you don’t like the liqueur, skip it and add another half cup of coffee.

    Add the dry ingredients:
Sift together the flour, the packet of baking powder, cornstarch, and a pinch of salt.

Add them little by little to the liquid mixture, mixing with a fork and then with your hands, until you get a soft but workable dough.

Depending on the flour used, absorption may vary and you might need a little less or more.

The result should be a compact, smooth dough, soft but not sticky.

  • Shape the cookies:
Take the dough, transfer it onto the wooden or silicone pastry board and shape the cookies.

Place them on a baking sheet lined with parchment paper or a silicone mat, leaving a little space between each.

    Bake:
    Bake in a preheated oven at 340 °F fan-forced for 14 minutes.

Always adjust according to your oven’s power.

    Let cool:
Let the cookies cool completely on a rack before decorating.

    Prepare the coating:
Melt the chocolate (I used chocolates I had at home) in a double boiler or microwave (in short intervals to avoid burning), stirring until smooth.

    Decorate the cookies:
Dip half of each cookie in the melted chocolate or use a teaspoon to drizzle it over, creating patterns as you like.

I also added silver sugar balls and chocolate sprinkles, decorate according to your taste and style.

Let the chocolate solidify at room temperature or in the refrigerator for a few minutes.

Get cookies with a soft heart and crumbly coffee-scented texture, with a chocolate coating that adds a delicious and shiny touch.

Ideal to serve with tea or coffee for a sweet moment. 🍫☕️

As you can see in the photo below, I packaged them in gift bags to give as small presents.

I must confess without presumption, they were really appreciated.

Hello, I'm Simona, and my page is called BriCciola in cucina, because I dedicated it to my mom and dad, who have called me that since I was little. I'm not a chef, and in my life, I've always dealt with completely different things, but cooking, along with dancing, has always been one of my great passions. However, my greatest inspiration came from the dishes prepared first by my grandmother and now by my mom. Here on my cooking blog, I'll guide you from appetizers to desserts, with recipes designed for a healthy and mindful lifestyle. Balanced dishes, carefully chosen ingredients, and lots of flavors, because eating well never means giving up pleasure. I love eating, but I also like taking care of my health, my family's health, and, in a way, the health of everyone who tries my recipes. That's why daily life should be rich in flavor, but always with a focus on healthy eating. Thank you, I look forward to seeing you.
