  • cornmeal (250g (8.8 oz))
  • all-purpose flour (280g (9.9 oz))
  • water (370g (1.5 cups))
  • 2 teaspoons sugar
  • dry yeast (8g (0.3 oz))
  • extra virgin olive oil (25g (2 tbsps))
  • fine salt (8g to dissolve in 20g of water (0.3 oz in 0.7 oz of water))
  • wholemeal flour (140g (4.9 oz))

Steps

Let’s see the steps to make the cornmeal rolls

  • First, start mixing the flours on the worktop or in the mixer. Add the sugar and the dry yeast as well. Mix well and now create a hole in the center, the classic fountain.

    Start pouring the water in the center of the flour, little by little. Add the oil and start kneading. When the dough starts to come together, also incorporate the salt, dissolved in a small amount of water.

    Once the dough is made, let it rise covered for at least 4 hours. Using cornmeal, the dough will take a little longer to double. Once the volume has doubled, take the dough and place it on the worktop. Make some folds and now shape the rolls, which you will arrange on previously floured parchment paper. I also made some cuts on the surface, you can finish and embellish as you like. Now dust the rolls with cornmeal and let them rise again for another 2 hours.

  • Turn on the oven in static mode and bring it to 374 degrees Fahrenheit. Once hot, bake the rolls, which should cook for about 20 minutes. Prick the bread with a toothpick before removing it from the oven. Everyone knows the power of their own oven and cooking times. Let’s adjust according to our appliance.

Storage

The bread can be stored for two days in a paper bag (bread bag). If it crumbles a bit over the days, it’s due to the presence of cornmeal.

When I make it in larger quantities, I store it in the freezer in bags suitable for freezing. When needed, take it out at least 10 hours before consuming it. If you heat it a bit in the oven or in a pan, it will recover perfectly.
