Ingredients

Let’s see the ingredients needed to make the plumcake

  • 1 cup heavy cream
  • 2.5 oz candied fruit (orange)
  • 2.5 oz sugar (you can go up to 3.5 oz for a sweeter taste)
  • 1 packet vanillin
  • 1 packet baking powder
  • 1 pinch fine salt
  • 0.7 oz liqueur (of your choice, e.g., rum)
  • 2 cups flour
  • 3 eggs
  • 0.7 oz pine nuts

Steps

  • In a mixing bowl, break the eggs, add the sugar, and a pinch of salt. Activate the electric whisk and beat the eggs until they become nice and frothy.

    Then add the vanillin and the sifted baking powder. Mix the batter again.

    Now add the liquid cream, the liqueur of your choice, and gradually the flour.

    When the batter is well combined and frothy, fold in 1.5 oz of orange candied fruit, the rest will be used to spread on top along with the pine nuts (if you like and prefer them).

    Once the batter is ready, butter and flour a plumcake mold, pour in the mixture, and decorate the surface with the remaining orange zest and pine nuts.

  • Preheat your oven to 338°F (STATIC MODE) and once at temperature, bake for about 42/43 minutes. Do the toothpick test before turning off the oven.

The plumcake can be stored under a glass dome or in a bag like the ones used to store panettone at Christmas.
