Creamy Mushroom Spaghetti

Dear friends, welcome back with a new recipe, specifically let me tell you about my creamy spaghetti with champignon mushrooms and cottage cheese.

A truly delicious first course, but as I say, mindful. Because this preparation absolutely does not contain heavy ingredients but only a lot of ingenuity, with which I managed to bring to the table, flavor but at the same time genuineness.

Ingredients

Let’s see the simple ingredients we will need to prepare the creamy mushroom spaghetti.

  • champignon mushrooms (16 oz)
  • 1 clove garlic (I also use powdered garlic)
  • to taste parsley
  • to taste extra virgin olive oil
  • to taste fine salt
  • cottage cheese (5 oz)
  • A few tablespoons milk (to blend)
  • to taste grated Parmesan cheese

An immersion blender will be needed to bring our ingredients to the creaminess you see in the photo.

Steps

Let’s see the simple steps to make this first course of creamy mushroom spaghetti

  • First, take our pan and add inside, the garlic, mushrooms (I also use frozen ones), parsley, salt, and a drizzle of EVO oil.

    To make the preparations healthier, I don’t over-fry too much, and this time I did the same. So I cooked the mushrooms covered in their water and added more if needed.

    The mushrooms will be ready when they are tender to taste, about 20 minutes, then adjust to your taste.

  • Meanwhile, while the mushrooms were finishing cooking, I put on the pasta water.

    While the pasta was cooking, I prepared our dressing. I simply put my ingredients in the immersion blender jar.

    The cooked mushrooms, cottage cheese, a few tablespoons of milk 2 / 3 depending on how creamy it is. Add two tablespoons of Parmesan as well and start blending until you get the desired consistency.

  • Now pour the obtained cream into the pan, drain the pasta, and if you like, I also added a few teaspoons of Greek yogurt (optional).

    Mix well, if it seems to dry out you can also add a little of the pasta cooking water. Plate and sprinkle with Parmesan and chopped parsley.

    Now enjoy your first course, creamy, delicious and mindful.

If I wanted to make this preparation saltier or more substantial, instead of cottage cheese I would have added spreadable cheese or gorgonzola.
