Creamy Skillet Beans

in

The creamy skillet beans are a nutrient-rich preparation.

A tasty dish that you can pair with other ingredients to create a unique dish, or enjoy as a side.

I love them with tuna or ground turkey and black rice.

Create satisfying unique dishes, low in fat but rich in fiber and protein.

  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients

  • 14 oz dried borlotti beans
  • 10.5 oz onions (3/4 medium onions)
  • 1.4 tsp fine salt
  • 1 tbsp extra virgin olive oil
  • 1.5 cups water
  • 1 tsp baking soda

Tools

  • 1 Pot
  • 1 Skillet
  • 1 Slotted spoon
  • 1 Knife
  • 1 Bowl

Steps

  • Preparing this dish may seem long but you’ll see it’s simple and worth it.

Obviously, using dried beans we must introduce the soaking step which should last about 10 hours.

For these reasons, when I decide to prepare this dish I soak them the night before, so that the next day they are ready to be cooked.

Take a bowl, even a plastic one, fill it with water, add a pinch of baking soda, and the dried beans.

    Let them soak overnight.

The following morning, rinse the legumes thoroughly and put them in a pot with about 1.5 cups of water, without salt.

The beans should cook for about 1 hour over medium heat.

Be careful not to keep the flame too high.

After about 50 minutes check if the beans are soft; they don’t have to be perfectly soft, as they will continue cooking in the skillet.

Once the legumes are ready, leave them in their cooking water and add about 1.5 tsp of salt (as we didn’t add it during cooking).

Meanwhile, start peeling, washing, and then slicing the onions, which we’ll put straight into the skillet.

  • Bring the skillet with the onions to the stovetop and add about 1 cup of the bean water and let it go for about 10 minutes.

Add the beans and lower the heat.

Do not add additional salt until the end.

Also pour in the extra virgin olive oil.

Let it cook and if you see the water is evaporating, add the remaining water from the pot.

Finally, after another 30/40 minutes, the onions along with the bean water will give creaminess to the preparation.

Only now taste and check the seasoning of the preparation, and add salt if needed.

    Our creamy legumes are ready.

I just wish you bon appétit.

Advice on storing creamy skillet beans

If you have leftover creamy skillet beans, or if you want to prepare them the day before you consume them, you can safely store them in the fridge.

When needed, just reheat the preparation in a pot or microwave in a suitable container.

bricciola

Hello, I'm Simona, and my page is called BriCciola in cucina, because I dedicated it to my mom and dad, who have called me that since I was little. I'm not a chef, and in my life, I've always dealt with completely different things, but cooking, along with dancing, has always been one of my great passions. However, my greatest inspiration came from the dishes prepared first by my grandmother and now by my mom. Here on my cooking blog, I'll guide you from appetizers to desserts, with recipes designed for a healthy and mindful lifestyle. Balanced dishes, carefully chosen ingredients, and lots of flavors, because eating well never means giving up pleasure. I love eating, but I also like taking care of my health, my family's health, and, in a way, the health of everyone who tries my recipes. That's why daily life should be rich in flavor, but always with a focus on healthy eating. Thank you, I look forward to seeing you.
