  • The trick to making this dish so tasty yet so light and genuine lies in the cooking method. Let me explain what I did.

    I took the zucchini, cut off the ends, and washed them well under running water.

    In a skillet WITHOUT OIL I sliced my zucchini into rounds. I added a sprinkle of salt and covered it. I let it cook on medium-low heat for about 10/15 minutes, checking the cooking and ensuring the water released by the zucchini didn’t dry up.

    After 10/15 minutes, I checked that they were cooked, a bit crunchy but cooked, and that the water had completely evaporated.

    I transferred the zucchini to a serving dish and started to season them with EVO oil, sliced garlic, oregano, and salt. THAT’S IT, I did nothing else.

    I let all the ingredients marinate together for about an hour, then served them as a side dish. You can also use them for an appetizer or to top bruschetta.

    Believe me, you won’t regret their tastiness.
