Made with just a few wholesome ingredients, these cookies have a delicate texture and a buttery taste, even though they are completely egg-free.
I chose to make them in this very simple shape with a dusting of powdered sugar.

- 2.5 oz sugar
- 3.5 oz butter
- Half packet baking powder
- 7 tbsps milk (as needed, depending on the dough, one more or one less)
- 1 lemon zest (grated)
- 2.5 cups flour

Steps
In a bowl, place the flour, add the sugar and grated lemon zest.
Mix these ingredients together with a fork.
Make a hole in the center of the flour “the so-called fountain” and add the softened butter, milk, and sifted baking powder.
Blend all the ingredients well, continuing to mix with the fork.
Do this as long as possible, then continue with your hands.
Shape it into a smooth and soft dough.
As I mentioned in the introduction, you can make the cookies in any shape you prefer: I used a round and scalloped cutter, but you can get creative as you like.
To achieve this height, I rolled out the dough with a rolling pin, being careful not to make it too thin.
For convenience, you can also tear off small pieces of dough and roll them into a simple ball with your hands, then slightly flatten them once placed on the baking tray.
Preheat the oven to static mode and once it’s at temperature, 350 degrees Fahrenheit, bake for about 13 minutes.
Simple, light, and wholesome, the cookies are ready to be enjoyed.
Storing Egg-Free Butter Cookies
Butter cookies remain fresh for two to three days in a tin box or a glass airtight cookie jar.
