Egg White Brick with Cream

I made the egg white brick with cream for my husband’s birthday. I put my heart and effort into it and even though it is not the perfect pastry cake, my joy was the satisfaction and appreciation of those who tasted it. 🥳😍

In the end, it’s the substance that matters.

I prepared the base of the brick with an egg white sponge cake.

I filled it with cream and whipped cream.

This dessert is really simple to make, but believe me, it will give you satisfaction and delight your palate.

Ingredients

Let’s see the ingredients needed to prepare the egg white brick with cream

  • 3/4 cup type 1 flour
  • 1 teaspoon baking powder
  • 1 pinch fine salt
  • 1/4 cup sugar
  • 7 oz egg whites (cold)
  • 1 packet vanillin
  • A few drops orange flavor
  • A few drops vanilla essence
  • 7 oz custard (or pudding cream)
  • 1 cup whipping cream
  • 1 tablespoon liqueur (rum or as preferred for desserts)
  • 1/4 cup water
  • 2 tablespoons powdered sugar

Steps

  • Take a mixing bowl and pour in the egg whites, whisk until stiff with a pinch of salt using the electric mixer.

    When they start to become foamy, gradually add the sugar.

    Now help yourself to stir the mixture with a spatula, folding from bottom to top and incorporate the sifted powders and then the essences.

  • Mix carefully to avoid deflating the mixture and then spread it on a baking sheet lined with compostable parchment paper.

    When spreading the mixture, don’t make it too thin. Leave some thickness

    Bake in a static oven at 356°F for 18/20 minutes.

    Do not overbake or the base will harden

  • When it’s ready, remove from the oven and let it cool.

    Cut the sponge cake sheet into three rectangles and assemble your dessert.

    On each strip, distribute the “soak” made of water, liqueur, and powdered sugar mixed together.

    After thoroughly soaking, spread over the custard or a pudding cream (as I did) and a layer of whipped cream.

    Follow this filling order by stacking all the rectangles. Once the brick is assembled, cover it with the remaining whipped cream and when serving, decorate with some dollops on the surface.

    Place in the fridge until ready to serve.

Tips for the Egg White Brick with Cream

To fill the egg white brick with cream I used a pudding cream instead of custard.

If you prefer custard, feel free to opt for it.

I made the pudding cream using a pudding mix, available at the supermarket.
