Eggless Omelette

The eggless omelette is an easy and tasty preparation that you can enjoy as a substitute for the classic omelette.

I made it with chickpea flour, which will also give that yellowish color, making the “eggless” omelette appear similar to the classic one.

If you want to vary and especially avoid consuming too many eggs, albeit genuine and rich in beneficial properties, try my recipe.

Ingredients

  • 1 cup chickpea flour
  • 1 cup water
  • 1 oz Pecorino Sardo (Romano, or Parmesan, whichever you prefer)
  • 1/2 tsp salt (adjust according to your taste preference)
  • 3 Tropea red onions (or other vegetables of your choice)
  • as needed extra virgin olive oil

Steps

    When ready, set aside.

    I always use light cooking without browning, and I assure you the taste doesn’t vary, try it, or do as you please.

    In a mixing bowl, put water and salt and incorporate the chickpea flour, a drizzle of oil, and using a whisk or fork, mix well.

    Add the previously cooked onions and the grated cheese.

  • Prepare a baking dish or a pan, which you have brushed with oil at the base.

    Pour the mixture and cook on low heat on the stove or in the oven at 320 degrees Fahrenheit for at least 30 minutes.

    I used an oven-safe pan with a 11-inch diameter.

    Do not use a smaller pan or dish as it will otherwise be too high.

    The omelette will be cooked when you see the crust on the top and bottom, and the inside is firm.

    Don’t worry if it seems a bit soft inside.

    As I mentioned, once ready, let it cool before eating, as it will firm up better and remain tastier.

    It would be perfect to prepare it even an hour before consuming it.

If you have leftover omelette, you can store it for 1/2 days in the refrigerator.

When you are ready to eat it, reheat it in a pan and it will be delicious again.
