Ingredients

Let’s see the ingredients we need to make the eggless stick cookies

  • butter (1.4 oz)
  • seed oil (3.4 oz)
  • sugar (2.1 oz)
  • Half packet baking powder
  • chocolate chips (1.8 oz)
  • milk (1/2 cup)
  • spelt flour (2 1/2 cups, you can also use all-purpose flour 2 3/4 cups)
  • 1 tablespoon almond extract

No special tools are needed. We will knead by hand and shape them ourselves without using molds

Steps

Let’s go through the steps to make the recipe

  • Take a bowl or our kneading board.

    Place the flour and sugar and mix these two ingredients together. Add softened butter in the center, oil, milk, and almond extract.

  • Starting from the center, begin to gather the flour from the edges and mix with a fork or if you prefer already with your hands. Add the chocolate chips and continue to stir.

    At this point, if you were using the fork, put it aside and start assembling with your hands. The dough will begin to take shape.

    Once ready, it should be soft but not sticky. If it is not, add a little more flour until you reach a workable consistency that does not stick to the board and hands.

  • Now take pieces of dough and make rolls, which we will simply cut with a knife to a length of 1 1/2 – 2 inches each. I’ve given you the indicative length of mine, you cut as best suits you.

    Place them on parchment paper and bake at 350°F (fan-assisted), preheated, for about 16 minutes. The cookies will remain crispy on the surface but softer inside.

    This cookie will not have the consistency of a shortbread cookie but of a soft shortbread.

    Before removing them from the oven, always check according to your oven, it may take a few minutes less or a few minutes more.

  • Here they are, ready to be enjoyed.

With these quantities, you will get about 16.5 oz of cookies, around forty pieces.
