Eggless yogurt pancakes are ready in just a few minutes and are the perfect breakfast for those who want both taste and lightness. These very easy pancakes are soft and tender, protein-rich and lightly sweetened: ideal to start the day with energy without overdoing the sweetness.

Ingredients

Here are the ingredients you need to make this recipe

  • 3/8 cup plain yogurt (preferably whole, but low-fat or lactose-free is fine)
  • 1/2 cup milk (preferably whole, but skim or lactose-free works too)
  • 3.5 oz flour (about 3/4 cup)
  • 1 lemon zest (grated)
  • 1 tsp extra virgin olive oil (or vegetable oil)
  • 2 tsp sugar
  • 2 1/4 tsp baking powder
  • to taste honey (for garnish, or use maple syrup)

Steps

  • In a bowl pour the milk, the yogurt, the two teaspoons of sugar and the grated zest of one lemon.

    Using a fork or a whisk, start to combine these ingredients.

    Add also the teaspoon of oil and then sift in the flour and baking powder.

    Keep mixing until smooth.

  • Once you have a homogeneous, smooth batter without lumps, it’s ready for the pan.

    Pour a little oil into the pan, heat it well and, using a silicone brush, coat it evenly.

    Pour a heaping tablespoon of batter for each pancake you make.

    They will be a bit smaller but super soft and delicious.

    If you prefer larger, thinner pancakes, simply spread a larger circle of batter in the pan.

    Cook them about two minutes per side; when you see the classic bubbles on the surface they are ready to be flipped.

    If you prefer sweeter pancakes you can dust them with plenty of powdered sugar or add a bit more sugar to the batter.

    Once ready you can enjoy the eggless yogurt pancakes garnished as I did with just honey, or with fruit, jam, spreads, maple syrup — let your imagination guide you.
