  • Eggs alla pizzaiola are prepared in no time, especially if we already have one of the key ingredients, the sauce.

    This dish was originally created as a way to use up leftover sauce from the day before. I prepare it both when I have some leftover sauce and when I have a craving for it, so I make the sauce as needed.

    As I mentioned in the introduction, this time I had turkey ragù sauce from the day before, but if you crave this dish and don’t have leftover ragù, with some chopped or pureed tomatoes, you can quickly make a fresh sauce with garlic, olive oil, onion, olives, and oregano, and it will be just as delicious.

  • With that said, let’s move on to the preparation.

    Take a pan, preferably non-stick (so you don’t need to add more oil at the bottom), place it on the stove and pour in the leftover sauce. If you’ve made a fresh sauce, obviously there won’t be the previous step of transferring the sauce.

    Now take the mozzarella, cut it into pieces and add it to the sauce, as if you were topping a pizza. So, distribute it all over the surface of the sauce.

    Let it go for just two minutes, as it starts to melt, take the eggs, (the number depends on how many people will eat) for two people, we use 3/4, and add them to the pan. Place a lid on top and let cook for about 10 minutes. The cooking time will depend on how soft or firm you want the yolk.

  • After a few minutes, our dish is ready to be enjoyed. Make sure to prepare some good bread, as dipping is a must here.

    Between the yolk and the sauce, I don’t know what I like more to scoop up with the bread.
