The Genoese meatloaf is one of the traditional Ligurian recipes, prepared with eggs, green beans, potatoes, onion, and marjoram.
My recipe is simple and accessible to everyone but the taste is guaranteed.
A healthy meal and genuine but also great to present at a buffet, perhaps cut into bite-sized squares.

Ingredients
- 21.16 oz green beans
- 21.16 oz potatoes
- to taste salt
- to taste extra virgin olive oil
- to taste marjoram
- 3 eggs
- 2.12 oz grated Parmesan cheese
- 2 onions (small)
- to taste breadcrumbs
- to taste cornmeal
- 2 cloves garlic

Steps
Clean the green beans by cutting the ends, rinse well under water several times and then cook in salted water.
Once ready, set aside.
Do the same with the potatoes, peel, and after washing them, cook in salted water.
Once the potatoes are ready, mash them and put them in a bowl.
Add the chopped green beans, eggs, Parmesan, salt, and a generous sprinkle of marjoram.
In a pan, chop the onions and garlic and let them soften with a drizzle of EVO oil and salt.
When they are cooked, add them to the rest of the mixture.
Now we can mix all the ingredients and create our mixture to pour into a pan.
Take a mold, round or rectangular, and after brushing it with oil, sprinkle breadcrumbs on top.
Place the mixture in the pan and recreate the classic stripes given to Genoese meatloaf.
Sprinkle with breadcrumbs and add cornmeal and a drizzle of oil over the entire surface.
The cornmeal will help make the top of the meatloaf even crunchier.
Preheat the oven to 356°F in static mode and bake for about 30/35 minutes.

Tips
If you like, you can also add chopped porcini mushrooms to the mixture, which you will have sautéed with garlic in a pan.
