Ingredients

Let’s see the ingredients we need to prepare this recipe

  • 1.76 lbs cauliflower
  • 1 l béchamel
  • 1 oz grated Parmesan
  • 1 oz Gruyère
  • to taste coarse salt
  • to taste water
  • 4 tbsps seed oil (I also prepare it with extra virgin olive oil; it works well either way)
  • 1 cup flour
  • 1 l milk
  • to taste fine salt
  • to taste nutmeg

Steps

  • Fill a pot with water, add salt, and boil the cauliflower florets, previously washed and cut. Once ready, drain them and put them in a baking dish. 10/15 minutes of cooking from boiling will be enough.

  • Pour the oil into a saucepan and with a whisk or fork, start to mix with the flour, which we will add little by little, until the liquid is completely absorbed. The result will be an agglomerated compound. The so-called roux.

    Now move the saucepan to the stovetop, turn on to low heat and begin to add the milk slowly until it is finished, continuing to stir with the whisk.

    Add salt and nutmeg and bring to a boil while continuing to stir, so that no lumps form.

    Continue until the béchamel has taken on the classic smooth and creamy form.

  • At this point, mix half of the prepared béchamel with the reserved cauliflower, mix well and pour the rest over the surface. Now sprinkle on top with grated Parmesan and Gruyère.

    Turn on the oven to convection mode 356°F and bake for about thirty minutes. Let the surface gratinate for a few minutes until golden and crispy. Remove from oven and enjoy this delicacy.

Tips for gratinated cauliflower

The gratinated cauliflower is already delicious in this version, but if you want to make it even more filling and complete, you can also add Gruyère cubes and ham inside.
