Ingredients
- 3 1/3 cups Type 2 flour (you can also use type 1, spelt, or all-purpose flour)
- 7/8 cup water
- 1 tsp fine salt
- 4 tbsp extra virgin olive oil
- 1 pinch baking soda

Steps
In a bowl pour the flour and a pinch of baking soda.
Mix these ingredients together.
Add the oil, salt, water, and start kneading.
If you like, you can do this with a fork until the mixture is firm and you need to work with your hands.
You will obtain a nice dough soft but not sticky.
Let it rest in the fridge for about an hour.Take the dough and divide it into 4/5 balls.
For thinner flatbreads you can divide the dough into 7/8 balls.
With a rolling pin, roll out the dough disks about 9 inches in diameter.
Heat the pan and once hot, place the flatbread inside.
Lower the temperature and cook for about 5 minutes per side over medium-low heat.
When ready, fill as you like.
Tips on how to store the lard-free flatbread
My lard-free flatbread was filled with sliced oxheart tomatoes, oregano, gorgonzola, stracchino, and pecorino slices.
Oh my goodness, how delicious.
Try it with vegetables, omelettes, mayonnaise, and whatever you like best.
It’s also convenient to bring to the office for lunch, especially if you have the chance to heat the food.
