- 2 eggs
- sugar (1/4 cup)
- lemon zest (organic, edible peel)
- lemon juice (1/4 cup)
- water (2 1/2 tablespoons, warm)
- vegetable oil (1/4 cup)
- 1 teaspoon vanilla extract
- 1/2 packet baking powder
- all-purpose flour (1 1/8 cup)

Steps
Let’s see the steps to make it
In a bowl, beat the eggs with the sugar, add the oil, warm water, lemon juice, grated zest, and vanilla teaspoon.
Once these ingredients are well combined, start incorporating the sifted flour and baking powder.
The mixture will be smooth and frothy which you will pour into a mold lined with parchment paper or greased and floured.
As you have seen from the quantities, this ring cake is for 4/6 portions, so the mold should not be too large. I used a silicone one with a diameter of 7 inches.
Pour the mixture into the chosen mold and bake at 338°F preheated static oven for about 35 minutes. Always do the toothpick test and adjust based on your oven.
Once taken out of the oven, I had fun decorating it with papaya peels. You can leave it simple or add powdered sugar on top.

Storage
The cake can be stored under a glass dome or in an airtight container for 2/3 days.
If my sugar amounts seem low to you, you can add an extra 2/3 tablespoons. I prefer not too sweet desserts, especially if they are well-flavored.
