- lemon zest (grated)
- water (3 1/2 tbsp)
- lemon juice (1 1/2 tbsp)
- corn oil (1/4 cup)
- all-purpose flour (1 cup)
- baking powder (1 tsp)
- 1 pinch fine salt
- 1 tsp vanilla extract
- as needed butter (for the molds)

First, take a bowl and with a fork or a hand whisk, beat together the eggs and sugar.
Add the grated lemon zest, lemon juice, corn oil, a pinch of salt, water, and the teaspoon of vanilla extract and mix well.
It’s time to incorporate the sifted baking powder and flour.
Your batter will be nice, smooth, and frothy.
Take your molds or the baking tray with the mold shapes (like mine) and after buttering and flouring it, turn on the oven to static mode at 338°F.
The donuts will need to bake for about 20 minutes. Always do the toothpick test before removing them from the oven to check if they are done.
