Ingredients
- 1 egg
- 1.76 oz lemon juice (+ zest of one lemon)
- 2.82 tbsp sugar
- 3.52 tbsp vegetable oil
- 2 cups rice flour

Steps
In a mixing bowl, break the egg, add the sugar and a pinch of salt. Start mixing with a fork.
Squeeze a lemon to get the required amount of juice, and strain it through a strainer to remove any seeds.
Add the juice and the grated zest and continue mixing. Add the oil and gradually incorporate the flour.
Mix with the fork as long as possible, then proceed with your hands.
Once you have a smooth and fragrant dough, place it on a pastry board and use a rolling pin to roll out a not-too-thin sheet.
This is because the cookies do not contain baking powder, and if rolled too thin, they won’t have the same texture and taste as when left thicker.
I cut out the cookies with a flower-shaped cutter and then, with the tip of a pastry bag, I created the decoration you see.
Everyone is free to cut out the cookies in the shapes they prefer.
Once the cookies are ready, place them on a baking sheet lined with parchment paper or a silicone mat. Depending on the size, you will get about 20 cookies.
Preheat the oven to 338°F (static), and once at temperature, bake and cook for about 18 minutes.
