Ingredients

Let’s see the simple ingredients needed to make the lemon treats.

  • 3 eggs
  • powdered brown sugar (100g if you prefer sweeter you can go up to 140g and use non-brown sugar as well)
  • corn oil (120g you can also use sunflower oil)
  • 1 lemon zest (grated)
  • rice flour (180g)
  • spelt flour (320g if you prefer also all-purpose flour)
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract (I used the liquid one in the tube from a well-known brand for baking etc)
  • 1 pinch fine salt

To make these cookies, you won’t even need molds, because I made balls with my hands, which I slightly flattened in the center with the help of a cap that had a little design engraved on the top. And that’s why they have that surface decoration. You’ll just need a bowl, a fork or hand whisk, and the baking tray to place the cookies on.

Steps

Let’s see the very simple steps to make the lemon treats.

  • With a fork or whisk, beat the sugar and eggs until fluffy, TIP (I ran the granulated brown sugar in the blender to make it powdered) add the oil, pinch of salt, grated lemon zest, vanilla extract, and the flours gradually.

    At this point, also add the sifted vanilla baking powder. Knead with your hands to make the dough and once it’s nice and smooth, shape it however you like. I already explained how I made mine.

  • Bake at 338°F (170°C) for about 15 minutes. Check according to your oven and take out. You’ll smell the wonderful aroma and see the marvelous shortcrust come out.

With these doses I’ve shared, you’ll get about 700 grams of cookies, which will keep perfectly for 4/5 days in a tin box or a glass pantry jar. But you’ll see that their deliciousness will make them last less.
