- 3.5 oz mandarins (juiced)
- 2 tbsps sugar
- 1 mandarin zest (grated)
- 1 egg
- 3.5 tbsps butter (softened)

- 1/3 cup whole wheat semolina flour (integral)

Steps
In a mixing bowl, grate the zest of the mandarin, add the sugar and start to mix them together.
Prepare the mandarin juice and set it aside.
Add the pulp, the mandarin juice, and the egg to the bowl, and mix.
Add a pinch of salt and the baking powder.
Incorporate the flours, and when it becomes too difficult to mix with a fork, use your hands to create a soft and homogeneous dough.
From the dough, take portions of about 1 oz each and form into balls.
Line a baking tray with parchment paper or a silicone baking mat and place the balls on it, flattening them slightly.
I decorated the cookies by poking the surface with a toothpick.

Bake in a preheated static oven at 356°F for about 17 minutes, until slightly golden.
