Margherita Cake

The Margherita cake is a fragrant creation, made with eggs, flour, butter, and some other ingredients.

My version is so soft and NOT TOO SWEET.

A light cloud that will satisfy even the most discerning and demanding palates.

Ingredients

Let’s see the ingredients we need to prepare the Margherita cake.

  • 1/4 cup sugar
  • 3 eggs
  • 7 tbsp butter
  • 3/4 cup type 1 flour
  • 3/4 cup potato starch
  • 1 tbsp baking powder
  • 1 pinch fine salt
  • 1 lemon zest (grated)
  • 1/4 cup milk
  • 1 tsp powdered sugar (for topping – optional)

Tools

  • 1 Cake Pan
  • 1 Spatula
  • Electric Whisks
  • 1 Mixing Bowl

Steps

  • In a bowl, place the softened butter and sugar.

    Mix these two ingredients well with a fork or electric whisks.

    Crack the three eggs and start adding them one at a time, continuing to mix with the whisks.

    Add the flour, the starch, and the sifted baking powder.

    Add them slowly to avoid airborne powder due to the whisks.

  • Add a pinch of salt, the grated lemon zest, and the milk gradually.

    Continue mixing with the whisks to obtain a smooth and creamy mixture.

    Grease and flour a 8-9 inch cake pan and pour in the batter.

    Level the mixture in the pan and bake in a preheated static oven at 350°F for 30 minutes.

    Each of us should adjust according to the power of our own oven.

    Before finishing baking, do the toothpick test.

  • A dusting of powdered sugar and enjoy this soft cloud of goodness.

How to store Margherita cake

Our soft cake can be stored for two or three days at room temperature under a glass dome.
