Ingredients

  • 3 1/3 cups semolina flour
  • 3/4 cup all-purpose flour
  • 4 tbsps milk
  • 2 tbsps extra virgin olive oil
  • 1 tsp sugar
  • 2 tsps fine salt
  • 0.42 oz fresh yeast
  • 1 1/4 cups water

Steps

  • In the mixer’s bowl, add and mix the two flours together.

    For these doughs, always use the hook attachment.

    If you don’t have a mixer, you can also knead by hand.

    In a separate container, pour water, oil, milk, sugar, and yeast and mix all the ingredients well together.

    At this point, slowly add the liquids to the flours remaining in the bowl of the mixer.

    When the dough starts to come together, add the salt. Always add it last.

    Once all the liquids are mixed and absorbed, let the dough rise, covered, for about an hour and a half. Try to place it in a spot sheltered from drafts, so inside the turned-off oven will be perfect.

    After this time, the dough should be nicely soft and risen. From the main dough, shape balls of about 80/90 g each and then place them in a muffin pan or aluminum liners.

    Once the balls are placed in the molds, they should rise again for about 50 minutes.

  • After the second resting time, create the classic holes on the buns that you will sprinkle with an emulsion of water and oil and salt. Use 20 g of oil and 40 g of water and half a teaspoon of salt.


    Now preheat the oven to 356 degrees Fahrenheit, static mode.

    Once it’s at temperature, bake for about 30 minutes.

    If the muffin surface seems to remain light, let it bake for a few more minutes (2/3) not more with the grill mode.

    With this step, you’ll give more color, but if you think they look perfect, leave them as they are.

  • Do the toothpick test and remove from the oven.

The muffin-style buns can be stored for a few days in a bread bag.

Or if you want to store them in the freezer, you can do so comfortably.
